- /Wash and completely dry the bhindi / okra (wipe with a cotton kitchen cloth to ensure there is no moisture remaining)

- Roast the fennel and cumin seeds and roughly ground them.
- In a bowl add the turmeric, cumin powder, fennel powder, red chili powder, coriander powder, amchoor powder and mix well. Check the taste for seasoning.

- Take a heavy bottom pan or a non-stick pan, add 2-3 tbsp spoon of oil, once the oil is hot add a pinch of asafoetida, then add okra/ bhindi and shallow fry on all the sides till it cooks. Stir occasionally in between to ensure all sides are cooked.
