- Prepare 1 tsp Vanilla Essence
- Prepare 1/4 tsp Baking Powder
- Take 1/4 tsp Salt
When you bake them, the colour fades a lot but you still get a lovely pink on the outside of the cookies, while the inside is a normal cookie colour. I've got a confession to make - and, no, it isn't a love confession! Toss in your chocolate chips, give it a final stir and admire your pretty cookie dough. Use a spoon to place on a cookie tray.
Instructions to make Delightful Pink Beetroot Cookies:
- First of all, prepare beetroot puree, wash, peel and chop the Beetroot. Then pressure cook with just enough water to 3-4 whistles or until soft. Cool it completely and make a thick puree(use little water if required).
- In a bowl, sift flour, baking powder and salt. Keep aside.
- Now blend butter, sugar and vanilla essence (I used food processor). Add Beetroot puree too and Mix everything well.
- Add this wet mixture to dry ingredients and mix it well to make a semi-thick consistency mixture. (The dough should be sticky).Cover and refrigerate for 30 minutes.
- Pre-heat the oven at 180°C and pour the above mixture in a Piping bag and put nozzle of your choice.
- Grease and dust the baking tray with some flour. Pipe the above mixture in shape of cookies. Keep a distance of 1 inch between the the cookies as during baking it'll rise.
- Bake it for 10-12 minutes at 180°C or till bottom of cookie is golden brown.
- Once cooled, store in an air-tight container. Enjoy!
Toss in your chocolate chips, give it a final stir and admire your pretty cookie dough. Use a spoon to place on a cookie tray. For heart shaped cookies (I warn these are a little fussy), try to smooth the dough into an exaggerated heart shape.
