  10. Get 2-4 dried chillies, crushed (depending on preference)

Add the quince paste and stir for a minute or two till it starts to melt. Combine remaining honey and sugar, brush over meat and roast. Pour the marinade over the pork belly. Cover and refrigerate four hours or overnight.

Instructions to make Pork Belly in Sherry Marinade:
  1. Mix all the marinade ingredients together in a bowl.

  4. Place the pork belly in a bowl and coat well with the marinade. Allow to marinade for at least 4 hours. Preferably overnight to 48 hours for better flavours. Turning the meat once so that both sides are evenly marinaded.
  5. Heat the coals or grill.
  6. Drain from the marinade and cook on each side for 5-8 minutes or until fully cooked through and slightly crispy on the outside.

Pour the marinade over the pork belly. Cover and refrigerate four hours or overnight. Combine rest ingredients for marinade into the mixing bowl - Japanese sake, Sesame Oil and Korean miso. Massage in the marinade ensuring equal distribution. Blend all the ingredients and pour the marinade over you meat.
