  7. Prepare 2 Stalks Celery; peeled & chopped

  9. Get 1/2 bag golden baby potatoes; quartered
  10. Get 2 yellow onions; diced

It's also a great way to use frozen vegetables when the produce section is looking bleak. Add split peas, chicken stock, thyme, bay leaves, and seared ham hock to the pot and bring to a boil. Cover peas with water and soak overnight. Drain, rinse and place in a Dutch oven.

Steps to make Pea Soup:
  1. In a large dutch oven add peas and 2qts water
  2. Simmer for 2 min, turn off heat, cover and let soak for 1 hour (or soak peas overnight)
  3. Add ham, onion, salt and pepper
  4. Cover, bring to a boil
  5. Reduce to a simmer and simmer covered, gently, for 90 minutes; stir often
  6. Add sausage, celery, carrots, and potatoes
  7. Cover and simmer gently for 30 min, or until potatoes are tender; stir often
