In north India ridge gourd curry is called Turai ki sabji and in Andhra we call it Beerakaya kura. Traditionally ridge gourd curry uses onion, tomato and green chilly. Today I am using red chilly powder,garam masala and peanuts. Simple basic ingredients which are easily available at home, goes into making this sabji.
Instructions to make Ridge gaurd curry (beerakaya kura):
- Slice Ridge gaurd and onion
- Grind Green chilli
- Take a pan and keep it on the stove, once the pan heats pour oil, once the oil heats add mustard and cumin seeds, once it starts spluttering add onions, curry leaves, roast it, add green chilli paste salt, turmeric, again roast it. Add Ridge gaurd. Mix it. Close it with a lid. Keep the stove in low flame.
- Open the lid after some time and check whether it is cooked properly or not, if it is cooked add coriander powder, cumin powder, roast it in a low flame. Add milk, once the milk evoporates add seseme seeds powder. Then add coriander leaves. Mix it.
- Take it into a bowl and serve hot with rice /chapathi /roti.
Today I am using red chilly powder,garam masala and peanuts. Simple basic ingredients which are easily available at home, goes into making this sabji. The Beerakaya Palu Posina Kura is done when the beerakaya pieces turn transparent and be cut easily with a spoon. Serve warm with rice or rotis. Andhra Beerakaya Palu Posina Kura beerakaya kodi guddu kura - Ridge gourd is called as beerakaya in telugu and when prepared with egg tastes delectable and anybody who tastes the combination of these two in a masala gravy, will surely love this.
