The ingredients needed to make Dondakaya (Ivy Gourd) fry:
- Take 1.5 tablespoons oil
- Make ready 250 gms dondakaya (ivy gourd)
- Take 2/3 green chillies
- Get 1 tablespoon ginger garlic paste
- Get 1 teaspoon turmeric, chilli powder, cumin, mustard, chana dal and urad dal
- Get Salt per taste

A simple but wonderful South Indian crispy fry vegetable preparation, fried ivy gourds flavoured with spices taste amazing! It's a dry curry/subzi which can be relished with rice or rotis. It's called Dondakaya koora (fry) in telugu.
Instructions to make Dondakaya (Ivy Gourd) fry:
- Clean and cut ivy gourd, chilies as shown in the pics below.
- Heat oil in a pan on medium flame and add cumin, mustard, chana dal and urad dal once oil is hot. Once it’s starts to splutter, add ginger garlic paste and cook till the raw smell goes. Add ivy gourd and chilies and mix well.
- Add turmeric, chilli powder and salt and mix well and let it cook for 15-20 mins in low flame. Keep stirring in between and add a spoonful of water if necessary. Enjoy with rice or roti.
